Ingredients:

  • 1 scoop of protein powder (flavor of your choice)

  • 1/4 cup oat flour

  • 1/2 tsp baking powder

  • 1/2 banana, mashed

  • 1/4 cup Greek yogurt

  • 2 eggs

  • Dash of cinnamon

  • Optional toppings: fresh berries, sliced bananas, nuts, sugar free syrup

Instructions:

  • In a bowl, mix together the protein powder, oat flour, and baking powder.

  • In a separate bowl, whisk together the mashed banana, Greek yogurt, eggs, and cinnamon until well combined.

  • Slowly pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms.

  • Heat a non-stick pan over medium heat and lightly grease with cooking spray or butter.

  • Pour a ladleful of batter onto the pan to form a pancake.
