Ingredients:
1 scoop of protein powder (flavor of your choice)
1/4 cup oat flour
1/2 tsp baking powder
1/2 banana, mashed
1/4 cup Greek yogurt
2 eggs
Dash of cinnamon
Optional toppings: fresh berries, sliced bananas, nuts, sugar free syrup
Instructions:
In a bowl, mix together the protein powder, oat flour, and baking powder.
In a separate bowl, whisk together the mashed banana, Greek yogurt, eggs, and cinnamon until well combined.
Slowly pour the wet ingredients into the dry ingredients, stirring until a smooth batter forms.
Heat a non-stick pan over medium heat and lightly grease with cooking spray or butter.
Pour a ladleful of batter onto the pan to form a pancake.
Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter.
Serve the protein pancakes topped with fresh berries, sliced bananas, nuts, and a drizzle of maple syrup.
